Dairy-Free Mushroom Risotto

Ingredients:

  • 1 cup Arborio rice

  • 4 cups vegetable broth, warm

  • 1 cup mixed mushrooms (such as shiitake, porcini, and button), thinly sliced

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/2 cup dry white wine (optional)

  • 2 tablespoons olive oil

  • 1/4 cup nutritional yeast (for a cheesy flavor)

  • Salt and pepper, to taste

  • Fresh parsley and thyme, chopped (for garnish)

  • 1 tablespoon truffle oil (optional, for drizzling)

Instructions:

  1. Prep the Mushrooms: In a large pan over medium heat, heat 1 tablespoon of olive oil. Add the mushrooms and sauté until they are soft and browned. Set aside.

  2. Cook the Onion and Garlic: In the same pan, add the remaining olive oil and the chopped onion. Sauté until the onion is translucent. Add the garlic and cook for another minute until fragrant.

  3. Toast the Arborio Rice: Add the Arborio rice to the pan and stir well to coat it in the oil and toast it slightly, about 2 minutes. The edges of the rice should become translucent.

  4. Deglaze with Wine: Pour in the white wine (if using) and stir until it's mostly absorbed by the rice.

  5. Add the Vegetable Broth: Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Wait until each addition is almost fully absorbed before adding the next ladle of broth. Continue this process until the rice is creamy and just tender, about 18-20 minutes.

  6. Mix in the Mushrooms and Nutritional Yeast: Add the sautéed mushrooms and nutritional yeast to the risotto. Stir well to combine. Season with salt and pepper to taste.

  7. Garnish and Serve: Serve the risotto garnished with fresh parsley, thyme, and a drizzle of truffle oil (if using).

Notes:

  • Consistency: The key to a great risotto is its creamy consistency, which comes from stirring often and adding the broth gradually.

  • Nutritional Yeast: This is a dairy-free way to add a cheesy flavor to your risotto. You can adjust the amount based on your taste preference.

  • Mushrooms: Feel free to use any type of mushrooms you like. Wild mushrooms will give the risotto a deeper flavor.
